Bakers Flour is a stone ground wheat flour which
contains a fine bran. The grain passes through
a stone mill and most of the bran is removed
while the germ and endosperm are retained.
The stone milling process gives a stronger
lavour and retains more nutrients when
compared with roller milled flours.

Bakes excellent bread.
Was really excited to find flour made with regeneratively grown wheat as it's known for having a higher nuitient density.
Found that the flour also contains higher levels of natural yeast than other flours. If I do a long ferment you can smelling sourdough type scents after about 24hrs. Expect this is because of the bioactive soil from the regenerative farming practices used.
