Ive tried many different flours for Sourdough bread making. As a standard household budget is important but not to sacrifice on taste and performance. I am using the flour for sourdough bread making and getting excellent strength and elasticity, and the oven spring has been excellent with great loaves produced. A noticeable improvement from lower protein flour that I used before
