It performs in various hot and cold formats, maintaining its texture and flavour integrity. Operators can confidently use it as a filling, topping, or ingredient to elevate their menu offerings and delight customers with a familiar yet fresh twist.
1. Storage & Handling
Store below 24°C in a dry place, away from direct sunlight to maintain optimal consistency.
Always seal the tub securely to maintain freshness.
Stir well before using.
The spread becomes thinner at higher temperatures and firmer when cooled.
Mixing or whipping will soften the spread. If too firm, gently mix to reach the desired texture.
2. Application Tips
Filling: Best used in chilled creams or buttercream (below 4°C). Recommended ratio: 1:1 with base.
Coating/Glazing: Can be used straight from the tub or gently warmed (max 70°C).
Frozen Desserts: Great for mousse, tiramisu, cheesecake. Freeze at -18°C.
Frying: Freeze spread before wrapping in dough. Fry while frozen.
Baking: Use as a filling rather than mixing into batter to preserve crunch. Max baking temp: 180– 200°C.
3. What to Avoid
Don’ t mix directly into wet batters or laminated dough.
Avoid baking in water baths (e.g., cheesecake).
Don’ t melt to liquid to avoid losing the signature crunch.
