Gelatine 220 Bloom is a light coloured edible beef skin (Type B) gelatine powder, soluble in hot water to form a clear solution with a characteristic bouillon like taste and odour. Gelatine is purified protein obtained from partial hydrolysis of collagen extracted from selected beef skins.
